Ingredients:
1 large Baking Potato, washed, baked
2 tbsp. canned Black Beans, cooked
2 tbsp. Whole Kernel Corn, cooked
1/4 cup Red Wine Vinegar
1 tsp. Onions, diced
1 tsp Salsa
2 tbsp. Olive Oil
1/4 tsp. Garlic Powder
Directions:
Cook beans and corn in 2 quart saucepan. Sauté onions and garlic powder in olive oil. over medium heat. Add beans and corn. Cook for another 3 minutes. Top split baked potato with bean mixture and salsa. Serves 1.
