Ingredients:
1 package White and Wild Rice Mix
1/2 cup chopped Onion
1/2 cup chopped Green Pepper
1/2 cup Red Pepper
1 1/2 cups sliced Mushrooms, about 4 ounces
2 teaspoons Italian Seasoning
1 can (8 oz) Black Beans
1/2 cup Whole Kernel Corn
1/2 cup Peas
Salt and Pepper to taste
1 tablespoon Olive Oil
Directions:
Cook rice according to package directions but discard spice package. In medium skillet, add olive oil and sauté onion, green and red pepper, mushrooms, and Italian seasoning. Cover and cook over medium heat until mushrooms are wilted, about 5 minutes. Remove lid and continue cooking until vegetables are tender and excess moisture is gone, about 5-8 minutes. Combine rice, mushroom mixture, beans, corn, and peas. Season with salt and pepper. Bake uncovered in a 2 quart casserole dish at 350 degrees until hot. (About 30 minutes) Serves 8
