Ingredients:
4 cups or two cans (16 oz each) Great Northern Beans
3 medium Onions, peeled, diced
2 tsp. Salt
1 1/2 cups Dark Molasses or Honey
2 tsp Dry Mustard
1/4 tsp Ground Allspice
1 tsp Black Pepper
4 Garlic Cloves
Directions:
Using dry beans; Put the beans in a large saucepan and pour in enough cold water to cover them by at least 2 inches. Bring to a boil for two minutes. Remove from heat and then let the beans soak in the water for about 1 hour. Bring them to a boil again. Add 1 onion and 1 tsp of salt. Half cover the pan and simmer the beans as slowly as possible for about 30 minutes or until partially done. Drain the beans and discard the bean water and onion. Pre-heat oven to 250° F. Place two onions, each with 2 cloves, in the bottom of a 2 1/2 quart casserole dish. Cover with beans. In a small bowl, combine molasses, dry mustard, allspice, and 1 tsp of salt and pepper. Stirring slowly, pour in 1 cup of water. Pour the mixture over the beans. Cover tightly and bake for 4 1/2 - 5 hours. Remove cover and bake for another 1/2 hour and serve.
**Using canned beans: combine all ingredients; stir well and heat in oven for 45 minutes to 1 hour.
Makes 6 - 8 servings.
