Ingredients:
1 medium Onion, finely chopped
1/2 small Green Pepper, chopped
3 tablespoons Olive Oil
1 can (16 oz) Stewed Tomatoes
1 teaspoon Salt
1/8 teaspoon Pepper
3 cups cooked Rice
Directions:
In a 10 inch skillet, sauté onion and green pepper in olive oil until onion is tender. Stir in tomatoes, salt, pepper, and rice. Simmer uncovered over low heat until hot, about 15 minutes. Serves 6
