Ingredients:
3 tablespoons Olive Oil
1/2 cup Onion, cut in half, slivered
4 ribs Celery, sliced diagonally
2 cloves Garlic, minced
1 tablespoon Ginger, minced
1 small Red Bell Pepper, washed, seeded and diced to 1/4 pieces
4 cups Long Grained Rice, cooked
1/4 lb Snow Peas, lightly blanched, cut in half-crosswise
1 cup Broccoli, fresh or frozen
1 cup Carrot, fresh, thinly sliced
2 tablespoons Soy Sauce
1/2 cup scallions, thinly sliced
1/2 cup Chestnuts (Optional)
Directions:
Heat olive oil in a large saucepan over medium-low heat. Add onions, celery, garlic, and ginger. Cook, stirring occasionally for 5 minutes. Add red pepper and cook another 3 minutes. Stir in rice and cook 2 minutes. Add broccoli, carrots, and snow peas. After 2 minutes stir in soy sauce. Mix well. Heat through and stir in scallions. Serve immediately. Serves 8
