Ingredients:
1/2 cup Onion, chopped
1/2 cup Red or Green Pepper, chopped
1 teaspoon Minced Garlic
1/2 small Jalapeno, minced (discard veins and seeds)
1/4 teaspoon dried Thyme Leaves
1/4 teaspoon Allspice
1 tablespoon Olive Oil
14 ounces Water
2 cans (15 ounces) Red or Black Beans
2 cups Sweet Potatoes, peeled and cubed (1/2 inch cubes)
3 tablespoon Lime Juice
Salt to taste
Directions:
In saucepan, sauté onion, pepper, garlic, jalapeno, thyme, and allspice in oil for 3-4 minutes. Add water, beans, and sweet potatoes. Heat to boiling and reduce heat. Simmer uncovered until sweet potatoes are tender, 10-15 minutes. Stir in lime juice and salt to taste. Serve over white or brown rice.
